This morning I left my dog sitting gig and headed straight for the farmers market? Why you ask? Because I can be in and out with a week's worth of fruit and veg in 10 short minutes AND spend only about 20 USD.

You thought I was lyin'? The haul from this day cost me $19.32. Seriously it's awesome.

They don't have everything like a grocery would, literally, it's just a gigantic produce section under one roof but they do have BEETS!

Loose and attached to their greens. I typically go for greens because I use the leafy bits in my morning smoothies. We low thyroid warriors need all the dark leafy we can get so I try not to let any part go to waste.

What do I do then with the beets themselves? - WELL lately, I've been making BEETROOT HUMMUS.

In all honesty, I'm incredibly disappointed in myself for not thinking of this. I tried Beetroot hummus pre-made from the grocery store in the beginning of the summer and I was hooked.

The best thing about making it at home, however, is that it's cheap, easy and as simple as you want it to be.

The sliding scale of Beetroot Hummus goes something like this...

What do I mean by this-

Well, there are a few different ways you can go about this, I'll list them from fastest and most costly to cheapest and most time-consuming.

"The Ain't Nobody Got Time" Route

  1. Buy Cooked Beets
  2. Buy Premade Hummus
  3. Blend Until smooth

The "I Got Some Time, But Don't Push it" Route

  1. Roast Own Beets
  2. Buy Pre made Hummus
  3. Blend Until Smooth

The "Oh I'm Homesteading the Hell Out Of This One" Route

  1. Roast Own Beets
  2. Make Own Hummus
  3. Blend Until Smooth

If you're really pinching pennies, making your own hummus is IDEAL because you can grab a can of chick peas for about .50 and make a ton. My absolute favorite hummus recipe is by my dear friend Liza of Resilient Health Coaching. You can find her recipe HERE

All of these methods are totally valid and completely delicious. And flexible too, depending on where on the sliding scale of effort and access to fundage you land. I like recipes that allow for adaptability.

Here's the really cool part. Beets are ridiculously good for you. They have too many benefits to list but for the sake of being informative AF here are a few:

  • Studies have revealed that beets are good at preventing skin, lung, and colon cancer
  • Betaines contained in beet juice stimulate the functions of the liver
  • Beetroot is a source of vitamin C that helps to prevent asthma symptoms.
  • The presence of beta-carotene helps to prevent age-related blindness, cataracts & macular degeneration

And if you STILL weren't sold on Beets...

  • Beets have been considered an aphrodisiac or sexual booster for millennia. Part of this stems from the fact that beets contain significant levels of the mineral boron, which has been shown to boost the production of sexual hormones. (YAASS BEETS GET IT.)

I rest my case.
