There's something I really love about vegan cooking. It makes me feel like MacGuyver or a contestant in a high steaks high-pressure cooking competition. Yeah, sure anyone can make a delicious and satisfying meal from full-fat milk, eggs, cheese, bacon etc. but what happens when you take that stuff away? What happens is some SERIOUS creativity and culinary ingenuity.

In all seriousness, the way things are going with the state of our planet with regard to climate change, there's a very real possibility that we're not always going to be able to get all the ingredients all the time. We've gotten so used to choice, and Amazon Prime convenience.

"Dayle, are you saying you're going to be making cheesecakes in the Apocalypse?"

DAMN RIGHT THAT'S WHAT I'M SAYING.

But a cheesecake with no dairy??

Stuff like this brings out my inner Jersey Girl and kind of makes me want to interrupt and say WAIT. BACK UP. Are you telling me this stuff is made out of AVOCADOS AND NUTS!!? BULLSHIT. PROVE IT.

What I'm saying is, when I see a post like this, I'm equal parts confused, enraged, intrigued and excited.

This weekend I put the recipe to the test. I stopped at the shop to get all the supplies I needed (and some I didn't, oh HELLO garlic melba crackers! HOW YOU DOIN GIRL!!?)

As much as I love to play the critic, this recipe is fire. Ugh. I decided to make the middle layer raspberry cheesecake instead of orange, and it came out so good that part of me wished I had just filled my jars with that, grabbed my spoon and called it a day. Crazy delicious. The chocolate layer is great too, it tastes like one huge truffle.

My only difficulty lied in the fact that I don't own a food processor so I had to do each layer in multiple batches in a small blender. I also didn't have a round spring form pan, so my "cakes" went into some reusable pint-sized ice cream containers Dad had knocking around. But that's what this whole post is about right? Evolving and ADAPTING!

After an epic battle dislodging my frosty prize from its plastic resting place, I garnished with a few of the extra frozen raspberries and BAM! We had a thing! I'm still shocked that this was as delicious as it looked in @allasyummyfood 's stunning photos.

I am here to report that "The Cake Is Not a Lie" (upvotes if you can tell me where that's from in the comments) It's completely delicious, and since I have 4 containers full I've got plenty to share with family!

I can't wait to see the looks on their faces when I tell them it's made of avocados and cashews!
