Oh baby, baby! I'm finding that making a big pot or pan of something awesome and just having it ready to go for the week has really been helping me eat right! So this week I made Vegan Plant-Based Chilli! It's got quinoa, sweet potato, sweet corn and tons of fibrous beans and lots of warm spices that make this dish feel all cozy and toasty and SO SO satisfying. -- Shall we begin then??

And so, as we always say on this blog... INGREDIENTS ASSEMBLE!!! - (Don't worry all the ingredients, as well as a nifty recipe card, are at the bottom of this post.) -- this recipe is my version adapted from a recipe found here
In all honesty this recipe is dead simple and fast to chuck together, aside from the seasoings there's only 7 ingredients, and if you're on a tight, "steem-price-took-a-dive-this-week", budget, this is the move- trust me!
This recipe starts like many other recipes... Onions in pot, and cook until translucent, may seem boring, but I'm suspicious of any chili soup or sauce that doesn't start like this if I'm honest.
In the meantime, feel free to crack those cans of beans open and give them a good rinse, we don't want any bean slime here! ew.. bean-slime.
When your onions look like this you're ready to move on and add 3 cups of your chicken broth... mmmm smell that??
Bring that broth to a boil and add your quinoa, beans, spices and diced sweet potatoes... oh BABY here's where things start to get good. Give the whole pot a good stir, cover and leave on med-low until those potatoes are fork tender, or FORK-GET-ABOUT-IT TENDER.
That bit should take about 30 minutes... and then.. CUE CARELESS WHISPER...

Yay it's chilli!! Here's where you'll stir in the last cup of broth take the whole thing off the heat, and taste to see where you're at seasoning wise and BAM... you're done!- I told you it would be easy! -CUE THE PHOTOS!
I really like it with avocado and corn chips... and extra spice to balance the sweetness of the corn and sweetpotato...UGH best....
